Blueberry Crunch

Blueberry Crunch Ingredients

1/2 cups


2/3 cups

Rolled Oats

1/4 cups





2/3 cup rolled oats (or oats of choice)
1/2 cup natural peanut butter
1/3 cup unsweetened applesauce
1/4 cup hemp seed
1/3 cup chopped organic apples
Dash of Cinnamon optional
Combine all ingredients in a bowl and mix together (warm/melt the peanut butter to mix with the rest of the ingredients). If the mixture is too wet, add more oats. If it is too dry, add more peanut butter. The mixture should resemble a sticky dough that holds together. Place the bowl in the refrigerator for 10 minutes or until the dough is thick enough to shape into balls. Remove mixture from refrigerator. Using a tablespoon (or cookie scoop) roll the mixture into balls. I used a Wilton silicone mold for a consistent shape and makes freezing easy. Sprinkle a small dash of cinnamon on balls, if desired. Place in the freezer for an hour. Remove and store appropriately.
